Himbasha

Himbasha is an Ethiopian and Eritrea bread with a decorative wheel on top.

Himbasha is a bread typically eaten for breakfast after mass or during special occasions. As an Ethiopian tradition, it is also broken on a child's back during their first birthday to give them strength. Additionally, the bread has a mix of both savory and sweet flavors.


Ingredients

  • 2 cups of all purpose flour

  • 3 tablespoons of sugar

  • 1 teaspoon of yeast

  • 1/2 teaspoon of salt

  • 2 Tbsp plus 2 tsp to grease of olive oil

  • 1/2 cup to 3/4 cup of warm water

  • 1/4 cup of raisins

  • 1 teaspoon of black sesame seeds

  • 1/2 tsp of cardamom powder

  • 3 tablespoons of milk (for brushing on top)

Instructions

  1. In the bowl of the food processor or a large bowl, add the flour, instant yeast, sugar, salt, cardamom powder and black sesame seeds. Mix well to combine.

  2. Add the raisins and the oil and mix once to combine.

  3. Slowly add warm water to make a soft dough. Knead for about 7 to 10 minutes to get a soft and non-sticky dough.

  4. Cover the dough and let it rest until doubled in volume. Usually 1-2 hours.

  5. Once the dough has risen, punch it down gently. Grease a 9 inch cake pan or any oven safe pan.

  6. Place the dough and spread it evenly across the pan. The dough will retract back. In that case, rest for 5 minutes and then stretch again.

  7. Cover the pan and let it rest for about 30 to 45 minutes or until the dough is puffy.

  8. Preheat the oven to 350 F.

  9. Now using a blunt knife, make patterns on the dough.

  10. Brush the top with milk and bake for 25 to 35 minutes or until the Himbasha is golden brown on top.

  11. Remove from the oven and let it briefly rest on a cooling rack. Slice and serve.
